 Making good pasta is a true art. If you attach great importance to quality, you can't avoid preparing it fresh. But it's not that easy. To make first-class Italian pasta, you need a lot of experience, talent and, of course, a great recipe that has ideally been used for generations and is therefore tried and tested.

That is at least desirable. Unfortunately, the reality is that Italian pasta is often not home-made, but simply bought in supermarkets or wholesalers. This is particularly true for many so-called Italian restaurants.
Why „so-called“? Quite simply: in a real Italian restaurant with quality, making the pasta yourself is not optional - it is essential and sets really good Italian restaurants apart from those that only want to make money from the excellent reputation of Italian cuisine worldwide, but have nothing to do with actual Italian cuisine.

We didn't want to be one of those standard Italian restaurants that you can find on every corner. It was important to us to bring authentic Italian food to Dresden that is convincing across the board and really represents the unique Italian cuisine in an extraordinary way, so that even Italians rave about it and you feel like you're in beautiful Italy.

An Italian restaurant with authenticity: the beginning of Mamma Mia

Our concept was clear right from the start: we wanted to build our restaurant around our mono-product of fresh pasta. This alone would set us apart from our competitors, who primarily relied on standard pasta from wholesalers and were almost committing a crime against Italian cuisine.
But who was going to prepare the fresh pasta in our restaurant? There was only one option: our incredibly talented mum, of course, who makes pasta so excellently that our restaurant could only be successful. Especially with our fantastic and secret pasta recipe, which has been used in our family for generations.
The whole thing was to be managed by two restaurant chefs who have been in Dresden since 2000 and have since gained a lot of experience in a wide variety of catering establishments in the city.
With such a great plan, the path to one of the best Italian restaurants in the city was already paved.

The rocky road to success: How Mamma Mia became increasingly popular

And so it was that our restaurant opened and we prepared our own fresh pasta right from the start. We didn't do this just anywhere, but right in front of the.
Eyes of our customers in the restaurant's dining area. So everyone could see straight away that our Italian pasta was the freshest pasta in the whole city.
As there was no Italian restaurant like ours in Dresden before, this was of course something new for many of our customers.
The expected rush was not initially what we had imagined. The first phase was difficult. But we stuck to our concept and always believed that our restaurant would be a complete success in the long term.
How could it not be so? Because anyone who has ever tasted our mum's Italian pasta has been completely convinced. Genuine Italian pasta, freshly prepared, without chemical additives and made from fresh eggs with a few more secret ingredients from our family recipe. The concept was well thought out and we knew it would be a success.

Subsequently, things turned out just as we had imagined: After the first tough phase following the opening of our restaurant, the popularity of Mamma Mia Dresden continued to grow and slowly but surely we climbed to the top of various restaurant review portals. The concept worked. Mamma Mia was always very popular and our customers were extremely satisfied with the quality of our pasta and the entire range of Italian specialities in our restaurant.
However, our guests were not only impressed by the flavour of the pasta, but also by the fantastic shapes in which it was made by our mamma. After all, Italian pasta is not just about the flavour: the presentation and appearance of the pasta is also crucial.
Bright colours, varied shapes, outstanding individuality: our pasta is truly unique and can only be purchased in our restaurant, where our Mamma ensures that Italian cuisine is respected as it deserves to be, in front of all our guests: With fresh pasta from Italy.

Fresh pasta for at home: we continued with our delivery service

We didn't offer a typical delivery service back then, and that's still the case today. The reason for this? Italian pasta must be eaten fresh and preferably within 5 minutes of preparation. This is the only way to ensure that the pasta does not stick together and lose the excellent flavour that you are used to from our pasta.

However, as our restaurant also had to close due to the measures taken by the government during the coronavirus crisis, it was extremely important to us to find a way for our customers to enjoy our mum's authentic pasta at home.

As a result, we subsequently set up a different kind of delivery service. The concept was simple: we created our unmistakable fresh pasta box in our restaurant with a wide variety of packaged ingredients and then delivered it to our customers in Dresden. From then on, it was also possible to collect the pasta box from the restaurant.

The best thing about it: our pasta box can be frozen for up to a month and used at any time. This means you can prepare a great 5-star Italian meal in just 5 minutes. This way, our customers can now also access our great ingredients at home and conjure up their own Italian dishes.

Each of our pasta boxes also comes with detailed cooking instructions and customers can choose between 10 different dishes each week, the ingredients of which we deliver to their home or which can alternatively be collected from our restaurant.

Even when we reopened our restaurant after the measures were lifted, we retained the delivery and collection service.

So anyone who didn't have time to enjoy our pasta directly in our Dresden Italian restaurant has been able to prepare authentic Italian dishes with high-quality ingredients at home ever since. Our successful concept has thus been expanded to include an additional feature.
